A recent article in the NY Times suggests spinach and other leafy greens may
gain nutritive value as they sit on supermarket shelves. This directly contradicts what the nice man at the farmers market told me this morning but I’m not too concerned. The fresh picked head of Boston bibb I got from the farmer is going to taste a lot better than the bag of supermarket romaine hanging out in the bottom of my crisper drawer.
